Homemade Fajita Seasoning

This homemade fajita seasoning is quick to make and full of bold, customizable flavor. Perfect as a dry rub or marinade for chicken, beef, shrimp, or vegetables on the grill, griddle, or smoker.

Ingredients
  

  • 1 tablespoon chili powder, (I use a mild blend)
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon sweet paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground coriander
  • 1 teaspoon Mexican oregano, (see note)
  • 1 teaspoon kosher salt (I use Diamond Crystal), or fine sea salt
  • 1 teaspoon freshly-ground black pepper
  • 1 teaspoon light brown sugar or granulated sugar, (optional—see note)
  • ¼ to 1 teaspoon ground cayenne pepper, (to taste—see note)

Instructions
 

  • Mix all ingredients in a small bowl until well combined.
  • Store the seasoning in an airtight container in a cool, dark, and dry place—like your pantry—for up to 6 months.

Notes

Mexican Oregano: If you're unable to source it, you can substitute Mediterranean oregano, but the flavor will be different. See the blog post above for additional notes.
Sugar: A touch of sweetness balances the spicy and savory flavors of the seasoning. You can leave it out if you prefer.
Cayenne: Adjust the quantity based on your heat preferences and the heat of the chili powder used. Can be omitted entirely for a mild seasoning.
