This homemade fajita seasoning is quick to make and full of bold, customizable flavor. Perfect as a dry rub or marinade for chicken, beef, shrimp, or vegetables on the grill, griddle, or smoker.
1teaspoonkosher salt (I use Diamond Crystal), or fine sea salt
1teaspoonfreshly-ground black pepper
1teaspoonlight brown sugar or granulated sugar, (optional—see note)
¼ to 1teaspoonground cayenne pepper, (to taste—see note)
Instructions
Mix all ingredients in a small bowl until well combined.
Store the seasoning in an airtight container in a cool, dark, and dry place—like your pantry—for up to 6 months.

Mexican Oregano: If you're unable to source it, you can substitute Mediterranean oregano, but the flavor will be different. You can leave it out if you prefer.Cayenne: Adjust the quantity based on your heat preferences and the heat of the chili powder used.
