Dive into summer with this easy Boat Dip, a twist on the popular TikTok recipe! Made with a creamy base, shredded cheese, Rotel, and zesty ranch seasoning, serve this flavorful dip with a variety of dippers for a casual snack.
1ounce packageranch seasoning mix or Fiesta Ranch dip mix
10ounce canRotel diced tomatoes with green chilies, drained
½cupsour cream
¼ to ½cupmayonnaise, (see note)
4ouncesfinely-shredded Colby Jack cheese, (1 generous cup), plus extra for garnish
thinly-sliced scallions, for garnish (optional)
tortilla chips, crackers, or fresh vegetables, for serving
Instructions
In a medium mixing bowl, beat the softened cream cheese with a hand mixer until smooth and creamy.
Add the seasoning mix, drained Rotel tomatoes, sour cream, mayonnaise, and shredded cheese. Mix on low speed until well combined.
Transfer the dip mixture to an airtight container and refrigerate for at least 2-4 hours (preferably, overnight) for the flavors to meld.
When ready to serve, scoop the dip into a serving bowl and garnish with extra shredded cheese and scallions, if desired.

Mayo Quantity: We honestly go back and forth on how much mayo to add to this dip, using between ¼ and ½ cup. I like adding a full ½ cup when I'm using Fiesta Ranch Dip Mix, since this variety tends to make the Boat Dip a little thicker. Using ½ cup can also balance the saltiness of some of the seasoning packets, which can vary by brand. I'd recommend starting with ¼ cup mayo and adding additional to taste, depending on the brands of ingredients you're using.Make it Cheesier: For a much thicker, cheesier dip, you can increase the amount of shredded Colby Jack to 8 ounces, or 2 cups. For the best results, use finely shredded cheese and grate it yourself from a block. Use the fine shredding holes of a box grater. Make It Without A Mixer: If you don't want to use a hand mixer, just stir the ingredients together in the bowl with a wooden spoon or rubber spatula until well combined. Be sure the cream cheese is softened to room temp so it stirs in smoothly.*This dip is perishable and needs to be kept chilled. Be mindful of food safety when serving it outdoors or in hot weather.
